Peanut Butter Cookies 1 1/3 cups unsifted all-purpose flour 1/2 cup unsalted butter (1 stick) 1 large egg 1 cup peanut butter 1/2 teapoon baking soda 1/2 teaspoon salt 1/2 teaspoon vanilla extract 1. In a bowl sift the flour along with the baking soda and salt. 2. In another bowl, beat the butter until it is soft. Then slowly add the sugar and beat this mixutre until its creamy. Then add the peanut butter and the egg, mix some more, and then add the vanilla extract. Then add the sifted flour and continue to mix thoroughly. 3. Preheat the oven to 375 degrees and lightly grease 2 baking sheets. Roll the dough into small balls, about an inch across and place them about 2 inches apart on the cookie sheets. Take a fork and flatten the balls, making one set of mark across them one way, and then marking them again cross ways, to make a pattern on the cookie. 4. Bake each sheet for about 15 minutes. Will make between 5 and 6 dozen cookies.
