Lemon Herb Chicken 2 lbs chicken (I prefer boneless/skinless breasts) 1 can(14.5oz) Swanson Chicken Broth (can use the Fat Free broth) 3 tablespoons lemon juice 1/8 teaspoon pepper 1 teaspoon dried basil leaves, crushed 1 teaspoon dries thyme leaves, crushed 1. mix all ingredients, except chicken, in a bowl 2. Now you have Two options: a. Chicken can be marinated in mixture for 30 minutes prior to baking OR b. Baste chicken with mixture just before baking and continue to spread mixture on chicken while cooking 3. Chicken may be baked in oven at 375 for approx 40 mintues, or placed on top rack on oven with oven set on broil for approx 30 minutes. Cooking time may be longer if chicken with bone left in is used.
