Buttermilk-Garlic Mashed Potatoes 3 lbs potatoes, preferably Yukon Gold peeled and cut in 2 inch cubes 6 tablespoons butter or maragarine 3 gloves garlic, minced 1/4 cup chives 1 1/4 teaspoon salt 1/2 teaspoon pepper 3/4 cup buttermilk 1. In a large pot add potatoes and enough water to cover them 2. Bring pototoes to a boil, and boil for 25-30 minutes, until they are tender 3. Drain potatoes, in another small pot, melt the butter over low heat after its melted add the garlic, and cook for 1 minute 4. Remove the butter and garlic from heat and add the chives, salt, and pepper 5. Pour these ingrdients into the pot with the potatoes. Beat or mash them until they are smooth. Slowly add buttermilk and contiue stirring until potatoes are smooth and creamy.
